The Pastry Academy recently welcomed Gaël Etrillard, Area Pastry Chef Les Vergers Boiron, for a technical “Atelier” focused on natural flavours and colours. In our first-ever one-day intensive workshop to feature 7 complete desserts, participants gained hands-on experience working with 100% natural fruit purées to prepare modern, clean-label pâtisserie under Chef Gaël’s expert mentorship.

Les Vergers Boiron purées deliver authentic, consistent flavour profiles and vibrant natural colours through precise pH and temperature management. These purées are made purely from natural fruit, entirely free from artificial enhancers or additives. Les Vergers Boiron is also an official sponsor for the Coupe du Monde de la Pâtisserie 2027.
